If measuring by volume, use the spoon-and-level methodโ€”fluff the flour, spoon it into the measuring cup, and level it off without packing it down.

  2. In a large mixing bowl, beat the sugars and the oilย with a handheld mixer until the sugar is well-coated by the oil.

  3. Add the eggs. Mix well.

  4. Next, beat in the sourdough discard, and then the vanilla (one at a time), until incorporated.

  5. In a separate, small bowl, whisk together the flour, baking powder, and salt.ย 

  6. Fold the dry ingredients into the wet mixture.

  7. Stir in the chopped pecans.

  8. Spread the mixture evenly into the greased baking pan.ย 

  9. Bake for 30โ€“35 minutes, or until a toothpick inserted in the center comes out clean.

Does the activity of my starter matter in this recipe?

Not really. Because this recipe isn't reliant on sourdough discard for structure, you can pretty much use it at any stage, with slightly different results in flavor and texture.

Can I long-ferment this recipe?

I wouldn't recommend it. To long-ferment the recipe, you would need to adjust the proportions of flour (to prevent over-softening) and sourdough discard (for a better fermentation). Additionally, you would need to hold the baking powder until just before baking. In my opinion, this recipe would need to be re-written to better accommodate a long fermentation, so I do not recommend long-fermenting this recipe as-is.
